Trend Toward Local Foods Creates Potential Markets

Experts say the growing trend for healthier eating and the preference for locally grown food present opportunities for Nebraska entrepreneurs.

Mark Gustafson is University of Nebraska Rural Initiative coordinator for economic development. He says the demand for locally grown foods will grow with the demands of restaurants, grocers, schools, hospitals and other institutions.

He says that "from the Rural Initiative perspective, we see this as a way to keep people in rural Nebraska and make a decent living."

The Center for Integrated Agricultural Systems at the University of Wisconsin-Madison says net cash income could reach more than $21,500 for one year from a 4.5-acre market garden.
