Fourth of July party eats

LINCOLN, Neb. -- Many people get invited to holiday gatherings, but find themselves stumped on what to bring. Registered Dietitian Amber Pankonin visited First News Nebraska Sunday with easy, tasty ideas that will be a hit at any Fourth of July party.

First, Amber demonstrated a faux cheesecake recipe that only takes a few minutes to whip up. The recipe includes strawberries, balsamic vinegar, powdered sugar, blueberries, ricotta cheese and cream cheese.

Amber also made faux jalapeño margaritas, including limeade and chopped cucumbers, mint and jalapeño.
