HASTINGS, Neb. (KSNB) - If you're wanting a home cooked meal on the go, a new restaurant has got you covered.
Patricia Freeman lost her last job as a baker after 24-years. So, she took her love of cooking and opened up her own restaurant, P's Lunchbox.
Freeman said she's bringing her Southern cooking to the mouths of Hastings.
And she hopes her customers leave with a full stomach and a taste of diversity.
"It's just important to me. No matter if it's here or anywhere else, but there's not a lot of black families that live here in Hastings, Nebraska, so that is very important so that they can see that I can start a business and succeed," said Freeman.
All the food that's sold is homemade. And that's everything from her roast beef to her homemade pies.
