1 pound shrimp, peeled and deveined
3 tbsp. olive oil
2 tbsp. white wine
salt and pepper
4 tbsp. butter, at room temperature
6 tbsp. olive oil
4 tsp. minced garlic
1/4 cup minced red onion
3 tbsp. parsley, dried
1 tsp. rosemary, dried
1/4 tsp. red pepper flakes (optional)
1 tsp. lemon zest
2 tbsp. fresh lemon juice
1 egg yolk
2/3 cup panko crumbs
Directions1. Preheat oven to 425 degrees
2. Place shrimp in mixing bowl and toss with oil, wine, salt and pepper. Allow to sit.
3. In bowl, mash butter with garlic, onion, parsley, rosemary, red pepper flakes, lemon zest and lemon juice, egg yolk, panko and salt and pepper
4. Arrange shrimp cut side down towards center of dish. Pour remaining marinade over top.
5. Spread butter mix over shrimp. Bake 10-12 min. Then place under broiled 1 minute.
