House Works: Be Mine with Chocolate

The countdown to Valentine's Day is on. What will you get your sweetheart? Sometimes the best gifts satisfy the sweet tooth.

In this House Works, Chef Judy Gilliard creates a decadent chocolate dessert that will make both your heart and your special Valentine happy.

Chocolate Pudding with Tofu

Servings: 4
12 ounces tofu, firm, drained
2/3 cup cocoa powder, dutch processed
2/3 cup turbinado sugar (raw sugar)
1 teaspoon instant coffee powder
1 teaspoon vanilla
1/4 cup chocolate chips, melted

Place all ingredients in food processor with still blade and run until smooth. You can use this as a pudding or as a topping.

Double Chocolate Cake

1 each chocolate cake mix
3 each egg
2 cups yogurt, skim milk (Greek nonfat)
1/4 cup chocolate chips, mini
1 teaspoon instant coffee powder
2 tablespoons cocoa powder (dutch processed)

Mix all ingredients together. Place in a bundt pan that is sprayed with a nonstick spray and bake at 325 for 40 to 45 minutes. (Place a pan of water on the bottom rack of your oven. This will create a steam to keep the cake moist.) Let cake cool for 10 minutes before placing on a plate.
