House Works: Off to a Healthy Start

Experts say breakfast is the most important meal of the day. But, sometimes it's hard to find the time to sit down for a hearty start.

In today's House Works, Chef Judy Gilliard shares a breakfast that's a win win! It's easy to make and will put smiles on the kids' faces, too.

Corn Waffles

Servings: 6
The corn meal in these gives the waffles an extra crunch. Serve them with yogurt, cream, or ricotta cheese with a little sugar and vanilla added on top with fruit.

1 2/3 cups Bisquick® baking mix (Heart Smart)
1/3 cup cornmeal
2 tablespoons flax seed, ground
1 1/2 cups milk, 1% low fat
1 teaspoon vanilla extract
2 large egg
2 tablespoons butter , melted

1.Mix all ingredients together.
2.Pour into hot waffle iron. (sprayed with non stick spray)
3.Bake until steaming stops.
Makes 6 8" waffles

Top waffles with yogurt cream and peaches or any other fruit you may like.

Yogurt cream

1 cup yogurt cheese (Greek style yogurt, plain no fat)
1 teaspoon vanilla
2 tablespoons turbinado sugar (raw sugar)
1 cup peaches, sliced
