John Hamburger started the Backalley Bakery 5 years ago.

"This was really a hobby when we first started doing it and I affectionately call it a hobby gone wild," said Hamburger. ""It's a wonder. It's a wonderful thing. I never would have imagined in my wildest dreams that this could happen. Five years ago we were just working out of the alley and this was the only entryway and we were just open two days of the week for 4 hours."

But once people got a taste of John's bread, the lines were long.

Hamburger said, "Down the alley and into the parking lot. There was a nice group of people we were experimenting on."

The experiment went so well that John's wife, Charlotte got in on the action.

"I'm really proud of the way that this has all kind of played out, said Charlotte Hamburger. "We really did start coming from a good place, just trying to provide good bread to the village of Hastings and I just wanted to help my husband fulfill his passion of baking and construction"

Deanna Jesse from Kearney stocks up when she's in town.

Jesse said, "Once you have one of those pieces of bread in your mouth you want more."

Business has gone so well that they've expanded toward the street where they now offer everything from cheesecake to quiche.
