Healthy Morning Glory Bran Muffins

Ingredients

1 cup flour
1 cup bran
3/4 c. ground flax seed
3/4 cup sugar
2 3/4 tsp baking powder
2 tsp gd. cinnamon
3/4 tsp salt
1/4 tsp baking soda
4 egg whites
1 egg
1/2 cup unsweetened applesauce
1/3 cup orange juice
1/4 cup canola oil
2 tsp vanilla
1/2 cup chopped pecans
1/2 cup flaked coconut
1 medium apple

Directions

Combine the first 8 ingredients. In another bowl beat egg, egg whites, applesauce orange juice, oil and vanilla.
Stir into dry ingredients just until moistened. Fold in the carrots, pecans, apple, and coconut.


Coat muffin cups with spray or liners. Fill 3/4 full. bake at 350 degrees F. for 15-18 minutes or until a toothpick comes out clean. Cool 5 minutes before removing from pan.


Recipe makes 18 servings.
