Mini Ham & Cheese Frittatas
If you plan on making your mom breakfast for Mother's Day, here's a simple recipe you could try.
Ingredients
6 ounces diced, fully cooked ham
½ cup diced onion
½ cup diced green or red pepper
2 teaspoons canola oil
9 eggs
6 egg whites
1 cup shredded reduced fat cheddar cheese
3 Tablespoons nonfat milk
¼ teaspoons salt
½ teaspoon pepper

Bake Time: 25 minutes
Makes 12 mini frittatas
Preheat oven to 375°F. Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion and peppers; sauté 2 minutes or until crisp-tender. Add ham; sauté 3 minutes. Remove from heat. Whisk remaining ingredients together in a large bowl. Add ham mixture, stirring until well mixed. Spoon mixture into a muffin pan coated with cooking spray. Bake at 375°F for 25 minutes or until a knife inserted in center of frittata comes out clean. Carefully run a knife around edges to loosen; remove from pan and serve.
