Grilled Bruschetta made with Fresh Roma Tomatoes
Ingredients
8 Roma tomatoes, diced
1/3 cup chopped fresh basil
1/4 cup shredded Parmesan cheese
2 cloves garlic, minced
1 tablespoon balsamic vinegar
1 teaspoon olive oil
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 loaf French bread, sliced at an angle
Light margarine, butter or olive oil
Garlic powder
Directions
In a bowl, toss together the tomatoes, basil, garlic, balsamic vinegar, olive oil, kosher salt, and pepper. Set aside. Spread thin layer of oil on both sides of bread slices. Sprinkle with garlic powder. Grill bread over medium heat or toast in oven until golden brown. Turn half way through to brown both sides. Top each slice of toasted bread with tomato mixture. Sprinkle parmesan cheese on top and heat until melted.
