Garden Gazpacho

3 cups tomato Juice (fresh or can use V8)

2 cucumbers, chopped

5 large tomatoes, chopped (alternative: 1 large can chopped tomatoes)

1 green pepper, chopped

1 celery stock, chopped

1 medium onion, chopped

1/4 cup fresh parsley

1/4 cup red wine vinegar

1 tablespoon lemon or lime juice

1 clove garlic minced

1/2 teaspoon pepper

1/2 teaspoon Tabasco sauce


Combine all ingredients cover and chill at least 6 hours. Serves 6.

Note: You can chop ingredients to your preference or you can process in a blender or food processor until smooth and then chill.
