Ingredients
1 1/2 lbs Florida grouper fillets (approx. 6 oz each)
½ teaspoon Salt
¼-teaspoon pepper
½-cup all-purpose flour
6 tablespoons butter, divided
1 cup Florida mushrooms, sliced
½-cup shallots
1 tablespoon Vermouth
4 teaspoons lemon juice
Directions
1. Season fillets with salt and pepper. Place flour in shallow dish; dredge fillets in flour to coat. Melt 4 tablespoons butter in 10 inch skillet over medium heat. Add fillets.
2. Fry for 5 to 7 minutes or until golden brown, turning once. Remove fillets to serving platter and keep warm.
3. Reduce heat to low. In same skillet, melt remaining 2 tablespoons butter. Add mushrooms and shallots; cook for 2 to 3 minutes, or until tender. Stir in vermouth and lemon juice.
4. Spoon mixture over grouper and serve.
