Blueberry Cherry Flax Muffins


1 1/2 cups Low Fat Baking Mix
2 1/4 c. Post Blueberry Morning cereal, divided
1/4c plus 2 tbsp packed brown sugar, divided
1/4 tsp ground nutmeg
3/4c dried cherries, divided
1/2 c light cinnamon applesauce
3/4c. skim milk
1 large egg, lightly beaten
3 TBSP ground flax seed, divided


Preheat oven to 400 degrees. In a large bowl, stir together baking mix, 2 cups cereal, 1/4 cup brown sugar, nutmeg and 1/2 cup cherries. Stir in applesauce, milk, egg and 2 tbsp flax. Spoon batter evenly into a medium muffin pan, filling each cup 3/4 full. Combine remaining 1/4 cup cereal, brown sugar, 1 tbsp flax, and cherries. Sprinkle over batter. Bake 18 to 20 minutes or until wooden toothpick inserted in center comes out clean.
