I always prepare a double or triple batch of this crunchy, sweet and salty treat - one or even two batches never seem to be enough!
1 bag butter flavored puffed corn
1 cup brown sugar
1/2 cup butter
1/4 cup light corn syrup
1/2 teaspoon baking soda
1 teaspoon vanilla
Preheat oven to 250. In medium sauce pan melt brown sugar, butter and corn syrup. Boil for two minutes. Remove from heat and and stir in baking soda and vanilla, you will notice the mixture become more light and fluffy. Pour over puffed corn and gently stir to coat evenly. Bake for 30 minutes, stir twice during baking (every 10 minutes). Let cool and crunch carefully because once you start you may not stop!
