4 boneless, skinless chicken breasts, cut into 1-1/2 inch cubes
1 tbsp Jamaican jerk seasoning
2 tbsp fresh lime juice
1/2 tsp kosher salt
8 Hy-Vee bamboo skewers, soaked in water at least 30 minutes
1/4 of medium Kandy cantaloupe, cut into 2-inch cubes
1/4 of medium honeydew, cut into 2-inch cubes
1/2 of a fresh Del Monte Gold pineapple, cored and cut into 2-inch cubes
1 tbsp Hy-Vee honey
1. Combine chicken, Jamaican Jerk seasoning, lime juice and salt in a large resealable plastic bag. Refrigerate at least 30 minutes to marinate. Discard marinade.
2. On wooden skewers, alternate chicken, cantaloupe, honeydew and pineapple.
3. Grill directly over medium heat 10 to 15 minutes, turning every 2 to 3 minutes or until chicken is cooked through. Remove from grill. Drizzle with honey.
