Turkey Hatch Pepper Quesadillas


8 Hy-Vee whole wheat tortillas
1 pound 93% lean ground turkey
½ pound pepper Hennings™ Jack cheese, shredded
4 Hatch Chili Peppers
1 tsp. chili powder
1 tsp. cumin
½ tsp salt
1 tsp oregano
1 tsp garlic salt
1 tsp onion powder
2 Tbsp lime juice


1) Cut off tops of peppers. Seed and devein. Chop peppers and stir-fry over high heat for 5 minutes, stirring constantly.
2) Cook turkey in skillet over medium high heat. After 3 minutes add seasonings and then cook for additional 3 minutes or until no longer pink.
3) Stir in lime juice
4) Put cooked meat, peppers and cheese on tortilla.
5) Grill on each side for 1-2 minutes or until cheese is melted.
